Let’s Bake: Gingerbread Biscuits

Like any child, my four children absolutely love biscuits. It doesn’t matter if they are homemade or shop-brought, they will pretty much eat any sort of biscuit given to them. This, therefore, gave me a great excuse to try a new biscuit recipe for us all to try – Gingerbread.

I am not quite sure why it has taken me so long to try it, but I am very glad I did. It was probably one of the most straightforward and easiest recipes I have tried while baking. Even better than that, the biscuits went down an absolute treat with my children and husband to the point they have all asked me to bake more as soon as I can.

Ingredients: 80g of Butter (softened), 50g of Caster Sugar, 1/2 teaspoon of Bicarbonate of Soda, 60g of Golden Syrup, 2 Egg Yolks, 250g of Plain Flour (plus extra for dusting), 1 teaspoon of Ground Ginger and 1 teaspoon of Ground Cinnamon

(Suitable substitutes are available for Vegans and those with a Gluten Intolerance.)

How to Bake:

This recipe has been taken, and slightly adjusted, from The Baking Recipe Collection by Sainsbury’s.

The amount of Ginger and Cinnamon can be adjusted based on your preference of how strong you wish the Gingerbread to be.

Step 1: Pre-heat your oven to 180 degrees C and line your baking tray with baking paper.

Step 2: Beat together the Butter and Caster Sugar until soft and creamy.

Step 3: Stir in the Bicarbonate of Soda, Golden Syrup and Egg Yolks.

Step 4: Sift in the Ginger and Cinnamon and mix until evenly spread through mixture.

Step 5: Sift in Flour and bring the mixture together, using your hands, until you have a ball.

Step 6: Leave to set for a few minutes.

Step 7: Roll out the mixture, on floured surface, to your desired thickness.

Step 8: Using the biscuit cutter of your choice, stamp out the biscuits.

Step 9: Repeat Steps 7 and 8 until all mixture has been used.

Step 10: Place on baking tray and put in oven to bake for 10-12 minutes.

Step 11: Cool on a wire rack before either serving or decorating.
