Let's Bake: Classic Cupcakes

*This recipe is suitable for Vegetarians and contains no nuts.*

*Vegan Substitutes are available for required ingredients.*

Ingredients: 115g of Butter, 115g of Caster Sugar, 1 teaspoon of Vanilla Essence, 2 Medium Eggs and 140g of Self-Raising Flour.

You can never go wrong with making cupcakes. They are probably the most basic cake you can make, has an straightforward recipe that can be adjusted for your preference of flavour and can be decorated or left as they are. The best part is that everyone will be happy to eat them, even the fussiest eater.

How to Make:

This recipe has been taken from The Baking Recipe Collection by Sainsbury’s.

Please note that I have not included instructions for the icing as everyone has different preferences. Mine just happens to be buttercream icing, preferably chocolate-flavoured.

Step 1: Preheat oven to 180 degrees C and line cupcake tray with cake cases.

Step 2: Beat the butter and sugar together until light and fluffy.

Step 3: Add the vanilla essence, eggs and 1 tablespoon of flour and beat until combined.

Step 4: Add the remaining flour and mix together.

Step 5: Divide mixture between the cases, add to the oven to bake for 20 minutes.

Step 6: Once baked, leave cakes to cool completely.

Step 7: Once cool, decorate with icing of your choice.

Step 8: Serve and ENJOY!
