I have made this cake twice now and I think it is safe to say that I am not that good at creating the marble effect that this cake is known for. Still it was delicious and well-received by my family both times I baked it.
The first time I baked this was at Christmas when I suddenly decided to go on a baking spree. I knew immediately I hadn’t quite gotten the marble effect but it was more down to the layering of the two mixtures. I even tried the ganache topping, but I stirred it for too long and struggled to get it onto the cake properly.
The second time I made it, as seen in the photo above, I chose to split it into loaf tins as I find I can create more manageable slices for my kids to eat. I thought I had gotten the marbling this time round as I had dragged the skewer through and the top of the mixture seemed to show a marble effect coming through. Instead, it seemed as though the chocolate mixture had spread throughout and basically left me with a chocolate cake!
As the cake went down well with everyone, I will certainly give this recipe a try again. Fingers crossed I finally manage the marble effect!
Ingredients: 225g of Butter, 225g of Caster Sugar, 4 Medium Eggs, 225g of Self-Raising Flour, 1 Teaspoon of Vanilla Extract, 100ml of Milk and 3 Tablespoons of Cocoa Powder.
(Suitable substitutes are available for Vegans and those with a Gluten Intolerance)
How to Make:
This recipe has been taken from The Baking Recipe Collection by Sainsbury’s.
Please note that I have chosen not to include the Ganache topping for this recipe.
Step 1: Preheat Oven to 180 degrees C and grease and dust with flour the cake tin of your choice.
Step 2: Beat the butter and caster sugar together until light and creamy.
Step 3: Add the eggs, one at a time, mixing in well.
Step 4: Mix in the flour, vanilla extract and milk until the mixture is smooth.
Step 5: Spoon half the mixture into a separate bowl and stir in the cocoa powder and a tablespoon of milk.
Step 6: Place alternate spoonfuls of each mixture into the cake tin, preferably starting and ending with the plain mixture.
Step 7: Drag a skewer through the mixture to create the marble effect. (Be careful not to stir the mixture together).
Step 8: Bake the cake for 30 minutes.
Step 9: Remove cake from oven, cover with foil and return to oven for 10-15 minutes.
Step 10: Remove from oven and leave to cool.
Step 11: Serve and ENJOY!
