The book from which this recipe has been taken, I have had for ages, but I have only used one, maybe two recipes from it. The best recipe to start with was obviously something chocolate based (have to keep the kids happy), but rather than going for the cupcake recipes I usually do, I decided to try out the muffins instead.
Admittedly, and as you can probably tell from the photo, I don’t have the right sort of baking tray for muffins. I was left using the moulds I have to make cupcakes, so my first attempt at muffins look more like cupcakes. However, that didn’t make them any less delicious. They certainly didn’t last long as my kids and husband demolished them quite quickly!
Ingredients: 50g of Butter, 75g of Brown Sugar, 1 Egg, 100g of Plain Flour, 2 teaspoons of Baking Powder, 1 tablespoon of Cocoa Powder and 90ml of Milk.
(Suitable substitutes are available for Vegans and those with a Gluten Intolerance.)
How to Make:
This recipe is taken from Cupcakes & Muffins recipe book.
Step 1: Preheat oven to 190C and prepare a muffin baking tray by either greasing it with butter or lining it with muffin cases.
Step 2: Add the butter, brown sugar and egg into a mixing bowl.
Step 3: Sift the flour into the bowl and stir until well mixed.
Step 4: Sift the baking powder and cocoa powder in the bowl.
Step 5: Pour in the milk and then mix until well mixed.
Step 6: Divide the mixture between the cases evenly and put into the oven to bake for 12 minutes.
Step 7: Remove from oven and allow to cool before either decorating or serving.
Step 8: ENJOY!
