Let’s Bake: Yoghurt Sponge Cake

This is probably my favourite cake recipe to make and it is one I have made numerous times when making birthday cakes for my children. It is a great tasting cake that goes down with most people and it is perfect for those who prefer something a little lighter than a chocolate cake.

The great thing about this recipe is you can actually change the choice of flavour from vanilla essence to one of your choice to give it that extra something. The last time I made it I was actually out of vanilla essence (another one of those things that everyone seems to be buying at the moment), so I was left to use whatever I had available and that was Lemon Extract. It gave the cake a little extra kick but was still just as tasty.

Ingredients: 175g of Butter, 350g of Plain Flour, 275g of Granulated Sugar, 3 Large Eggs, 1 teaspoon of Baking Powder, 1 teaspoon of Bicarbonate of Soda, 3/4 teaspoon of Salt, 225ml of of Natural Yoghurt, and 2 teaspoons of Vanilla Essence.

(Suitable substitutes should be available for Vegans and those with a Gluten Intolerance)

How to Make:

This recipe is taken from Kids’ Birthday Cakes recipe book.

Step 1: Preheat the oven to 180C and line your chosen cake tin(s) with tin liners or dust with plain flour.

Step 2: Add the butter and sugar to a mixing bowl and whisk until smooth and light in colour.

Step 3: Add one egg in at a time, beating it into the mixture fully before adding the next one.

Step 4: Sift the flour, baking powder, bicarbonate of soda and salt into a separate bowl.

Step 5: Add the yoghurt and vanilla essence into another bowl and mix together.

Step 6: Aletnate adding the dry ingredients and the yoghurt mixture to the cake mixture, starting and ending with the dry ingredients.

Step 7: Mix the ingredients together until well blended.

Step 8: Pour the mixture into the cake tin(s) and place in oven to bake for 35 minutes.

Step 9: Remove from oven and allow to cool until ready to either decorate or serve.
