Let’s Bake: Chocolate Chip Muffins

*This recipe is suitable for Vegetarians and contains no nuts.*

So, out of all the muffin recipes I have tried and baked in the last few weeks, I have to say that this was the one where they actually came out looking like muffins. I don’t know if it is to do with the ingredients or if I did a better job while prepping the mixture, but the fact they actually looked like they were meant to made me quite happy.

Ingredients: 50g of Butter, 75g of Brown Sugar, 1 Egg, 100g of Plain Flour, 2 teaspoons of Baking Powder, 1 tablespoon of Cocoa Powder, 90ml of Milk and 75g of Chocolate Chips.

(Suitable substitutes are available for vegans and those with a gluten intolerance)

How to Make:

This recipe is taken from Cupcakes & Muffins recipe book.

Step 1: Preheat oven to 260C and line your tray with muffin cases.

Step 2: Add the butter, brown sugar, and egg into a mixing bowl.

Step 3: Sift in the plain flour and then stir until ingredients are well mixed.

Step 4: Sift in the baking powder and cocoa powder into the bowl.

Step 5: Add the milk and chocolate chips and stir until well mixed.

Step 6: Divide mixture evenly between cases and place in oven to bake for 12 minutes.

Step 7: Remove from oven and allow to cool.

Step 8: Serve and ENJOY!
