As you can probably tell from the photo, my cookies were not triple chocolate. While I used the basic recipe listed below, I had to make a change to it due to a lack of dark chocolate. It seems that I am always missing one ingredient these days! Even so, chocolate cookies are still chocolate cookies and they are certainly family favourite.
Ingredients: 150g of Butter, 100g of Light Brown Sugar, 75g of Caster Sugar, 1 teaspoon of Vanilla Extract, 150g of melted Dark Chocolate, 1 beaten Egg, 175g of Plain Flour, 2 tablespoons of Cocoa Powder, 1 teaspoon of Baking Powder, a pinch of Salt, 150g of Milk Chocolate chunks, and 150g of White Chocolate chunks.
(Suitable Substitutes should be available for Vegans and those with a Gluten Intolerance)
How to Make:
This recipe is taken from the Baking Recipe Collection by Sainsbury’s.
Step 1: Preheat oven to 180C and line trays with baking parchment.
Step 2: Add the butter, brown sugar, caster sugar and vanilla extract to mixing bowl and whisk together.
Step 3: Add the melted chocolate and egg to the mix and whisk together.
Step 4: Sift in the plain flour, cocoa powder, baking powder and salt to the mixture and whisk together.
Step 5: Add the chocolate chunks to the bowl and stir them into the mixture.
Step 6: Spoon rounds of the mixture onto the baking trays and place in the oven to bake for 12 minutes.
Step 7: Remove from oven and leave to cool and set.
Step 8: Serve and ENJOY!
